Instructions
Braise the lamb:
Heat the oil in a Dutch oven over medium-high heat. Brown the lamb in batches, then transfer it to a plate.
Cook the onion for 4 minutes. Add the garlic and oregano, then sprinkle in the flour and stir for 1 minute.
Return the lamb to the pot, add the stock, salt, and pepper, and bring to a gentle simmer. Cover and cook for 35 minutes, until nearly tender.
Bake:
Heat the oven to 375°F (190°C). Transfer the lamb and its sauce to a greased 9-inch baking dish.
Whisk the yogurt, eggs, melted butter, flour, and nutmeg until smooth. Spread it over the lamb.
Bake for 35 to 40 minutes, until the topping is puffed and deeply golden. Rest for 10 minutes before serving.
Notes
Use thick yogurt so the topping sets cleanly and does not become watery.
The casserole is easiest to portion after a short resting period.
