Waffle Batter
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs separated
  • 1 3/4 cups whole milk
  • 1/2 cup unsalted butter melted and cooled
  • 1 tsp vanilla extract
Toppings
  • 1 cup strawberries sliced
  • 1/2 cup blueberries
  • 1/2 cup whipped cream
  • 2 tbsp maple syrup

Method
 

Mix the Batter:
  1. Whisk the flour, sugar, baking powder, and salt in a large bowl.
  2. In a second bowl, whisk the egg yolks, milk, melted butter, and vanilla. Stir the wet mixture into the dry ingredients until just combined.
  3. Beat the egg whites to soft peaks and fold them gently into the batter.
Cook the Waffles:
  1. Preheat the waffle iron and lightly grease it if needed.
  2. Add enough batter to cover the plates without overflowing. Cook until deeply golden and crisp, usually 3 to 5 minutes.
  3. Transfer each waffle to a wire rack and repeat with the remaining batter.
Serve:
  1. Top the waffles with strawberries, blueberries, whipped cream, and maple syrup. Serve immediately.
