Brown the Pork:
- Pat the pork dry, season with half the salt, and brown in the oil in three batches. Transfer to a plate.
- Cook the onions for 8 minutes, then add garlic, peppers, and mushrooms and cook until softened.
Braise:
- Stir in tomato paste, paprika, savory, cumin, black pepper, and remaining salt. Add tomatoes, stock, and pork.
- Cover and simmer gently for 50 to 60 minutes until the pork is tender and the sauce is thick, uncovering for the final 10 minutes if needed.
Finish:
- Fold in most of the parsley and adjust seasoning. Spoon into warm clay pots or a serving bowl and finish with the remaining parsley.
