Burkinabè Riz Gras with Chicken and Vegetables

Ingredients
 
 

Chicken and tomato base
  • 1 1/2 pounds bone-in chicken thighs and drumsticks
  • 2 tablespoons neutral oil
  • 1 large yellow onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons tomato paste
  • 1 can crushed tomatoes 14.5 ounces
  • 4 cups chicken stock
Rice and vegetables
  • 2 cups long-grain rice rinsed
  • 2 medium carrots cut into chunks
  • 2 cups green beans cut into pieces
  • 1/2 small green cabbage cut into wedges
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon fine salt
  • 1/2 teaspoon black pepper

Equipment

  • Large Dutch oven
  • Chef's knife
  • Wooden spoon
  • Rice paddle

Method
 

Brown the chicken:
  1. Pat the chicken dry and season with half the salt and pepper. Heat the oil in a Dutch oven and brown the chicken on all sides. Transfer to a plate.
Make the tomato base:
  1. Cook the onion in the pot until soft. Add the garlic, ginger, tomato paste, paprika, and thyme and cook for one minute. Stir in the crushed tomatoes and simmer for 8 minutes.
Simmer the chicken:
  1. Return the chicken to the pot with the stock, carrots, beans, cabbage, and remaining seasoning. Cover and simmer for 20 minutes.
Cook the rice:
  1. Stir in the rinsed rice. Cover and cook over low heat for 20 to 25 minutes, until the rice is tender and the chicken is cooked through. Rest covered for 10 minutes.
Serve:
  1. Fluff the rice gently around the chicken and vegetables, then serve hot from the pot.

Notes

  • Rinse the rice until the water runs mostly clear to reduce excess surface starch.
  • Keep the lid closed during the final steaming stage so the rice cooks evenly.
