Instructions
Shake:
Add the pisco, lime juice, simple syrup, and egg white to a shaker. Shake hard without ice for 15 seconds.
Add the ice and shake again until the shaker is very cold.
Strain and Garnish:
Double-strain into a chilled coupe glass to remove ice shards and create a smooth foam.
Add three drops of bitters to the foam and serve with a lime wedge if desired.
Notes
Use fresh lime juice; bottled juice makes the drink noticeably flatter.
For a lighter drink, reduce the pisco slightly and add a splash of chilled soda.
