Instructions
Build the drink:
Fill a chilled wine glass with ice.
Pour in the ruby port and top slowly with chilled tonic water.
Give the drink one gentle stir to combine without flattening the bubbles.
Garnish and serve:
Express the orange peel over the glass, rub it around the rim, and drop it in.
Add the rosemary sprig and serve immediately.
Notes
Use white port for a lighter, more citrus-forward drink.
Large ice cubes melt more slowly and keep the drink balanced.
A dry tonic works well when the port is particularly fruity.
