Equipment

  • Wine glass
  • Jigger
  • Bar spoon
  • Citrus peeler

Ingredients

Port Tonic

  • 2 oz ruby port chilled
  • 4 oz tonic water chilled
  • 1 cup ice large cubes
  • 1 large orange peel wide strip
  • 1 sprig fresh rosemary for garnish

Instructions

Build the drink:

  • Fill a chilled wine glass with ice.
  • Pour in the ruby port and top slowly with chilled tonic water.
  • Give the drink one gentle stir to combine without flattening the bubbles.

Garnish and serve:

  • Express the orange peel over the glass, rub it around the rim, and drop it in.
  • Add the rosemary sprig and serve immediately.

Notes

  • Use white port for a lighter, more citrus-forward drink.
  • Large ice cubes melt more slowly and keep the drink balanced.
  • A dry tonic works well when the port is particularly fruity.
