Ingredients

Coconut-Rice Drink
  • 1/2 cup long-grain white rice rinsed
  • 3 cups warm water divided
  • 1 cup unsweetened shredded coconut
  • 4 cups whole milk very cold
  • 1/2 cup granulated sugar or to taste
  • 1 tsp vanilla extract
  • 1 tbsp rose water optional
  • 1/8 tsp fine salt

Equipment

  • Large bowl
  • High-speed blender
  • Fine-mesh sieve
  • Glass pitcher

Method

Soak:
  1. Combine rice, coconut, and 2 cups warm water in a bowl. Cover and soak for 2 hours at room temperature.
Blend and Strain:
  1. Transfer the soaked mixture and its liquid to a blender. Add remaining water and blend for 2 minutes until very smooth.
  2. Pour through a fine-mesh sieve into a pitcher, pressing gently but not forcing coarse solids through.
Finish and Chill:
  1. Whisk in cold milk, sugar, vanilla, rose water if using, and salt until the sugar dissolves. Refrigerate for at least 30 minutes.
  2. Stir well and serve very cold in clear glasses.

Notes

  • Stir before every pour because a small amount of natural rice sediment can settle during chilling.
  • Keep refrigerated and drink within two days; do not leave the dairy-based drink at room temperature.
