Ingredients
 
 

Layers
  • 4 cups shaved ice freshly shaved
  • 1 cup evaporated milk chilled
  • 1/2 cup sweet red beans drained
  • 1/2 cup sweet white beans drained
  • 1/2 cup nata de coco drained
  • 1/2 cup jackfruit sliced
  • 1/2 cup ube halaya
  • 4 scoops ube ice cream
  • 4 oz leche flan cut into pieces
  • 1/4 cup granulated sugar optional, for extra sweetness

Equipment

  • Four tall glasses
  • Long spoons
  • Fine grater or ice shaver
  • Small bowls

Method
 

Prepare the Toppings:
  1. Drain the beans and nata de coco. Slice the jackfruit and leche flan into bite-size pieces.
  2. Chill the glasses and all toppings while the ice is prepared.
Layer the Glasses:
  1. Divide the sweet red beans, white beans, nata de coco, jackfruit, and ube halaya among four tall glasses.
  2. Pack each glass with shaved ice, then pour over the evaporated milk. Add a scoop of ube ice cream and a piece of leche flan.
Serve:
  1. Add sugar if desired and serve immediately with long spoons.
  2. Mix the layers together as you eat so every spoonful includes several textures and flavors.
