Clafoutis Batter

pitted fresh cherries

Instructions
Prepare:
Heat the oven to 375°F (190°C). Butter a 9-inch baking dish and arrange the cherries in an even layer.
Whisk the flour, sugar, eggs, milk, cream, melted butter, vanilla, and salt until smooth. Pour the batter over the cherries.
Bake and Serve:
Bake for 35 to 40 minutes until puffed, golden, and softly set in the center.
Cool for 15 minutes. Dust with powdered sugar, slice, and serve with whipped cream if desired.
Notes
The center should have a gentle wobble when the clafoutis comes out of the oven.
Frozen pitted cherries can be used straight from frozen; add a few minutes to the bake time.
