Make the Cake:
- Mix the flour, sugar, yeast, and salt. Add warm milk, egg, and softened butter, then knead until smooth and elastic.
- Press the dough into a greased 9-inch springform pan. Cover and let rise for 45 to 60 minutes until puffy.
Add the Topping and Bake:
- Heat the oven to 350°F (175°C). Melt the butter with sugar, honey, and cream. Stir in the almonds and spread the mixture over the risen dough.
- Bake for 25 to 30 minutes until the cake is golden and the almond topping is caramelized. Cool completely in the pan.
Make the Custard and Assemble:
- Warm the milk with half the sugar. Whisk the remaining sugar with egg yolks and cornstarch, then slowly whisk in the hot milk.
- Return the mixture to the saucepan and cook over medium heat, whisking, until thick. Stir in vanilla, cover the surface, and chill completely.
- Whip the cream and fold it into the chilled custard. Split the cooled cake horizontally, spread the custard over the bottom, and replace the almond-topped half. Chill before slicing.
