Ingredients

Hibiscus infusion
  • 1 cup dried hibiscus petals loosely packed
  • 6 cups water
  • 3 inch fresh ginger sliced and lightly crushed
  • 1 cup pineapple chunks fresh or unsweetened
  • 0.5 cup granulated sugar or to taste
  • 0.25 cup fresh lime juice about 3 limes
To serve
  • 3 cups ice cubes
  • 1 lime lime thinly sliced for garnish

Equipment

  • Large saucepan
  • Fine-mesh strainer
  • Large pitcher
  • Citrus juicer
  • Refrigerator

Method

Steep the hibiscus:
  1. Bring the water and ginger to a boil in a saucepan. Remove from the heat, add the hibiscus petals, and steep for 8 minutes.
  2. Strain the infusion into a heatproof pitcher, pressing the ginger and petals gently but not forcing sediment through the strainer.
Flavor and chill:
  1. While the infusion is warm, stir in the pineapple, sugar, and lime juice until the sugar dissolves.
  2. Cool to room temperature, cover, and refrigerate for at least 2 hours until thoroughly chilled. Strain again if needed.
Serve:
  1. Fill six glasses with ice, pour in the sobolo, and garnish with lime slices.

Notes

  • Adjust the sugar after chilling; cold drinks taste less sweet than warm ones.
  • A small piece of cinnamon or a few cloves can be steeped with the ginger for a warmer variation.
