Season the fish:
- Pat the fish dry. Mix the lime juice, garlic, paprika, salt, and olive oil, then rub it over the fillets. Rest for 15 minutes.
- Mix the onion, tomatoes, cucumber, vinegar, chile, and parsley in a bowl. Keep the relish chilled until serving.
Cook and serve:
- Steam the attiéké according to the package directions, usually 5 to 8 minutes, then fluff it with a fork.
- Heat a grill or grill pan over medium-high heat. Grill the fish for 3 to 5 minutes per side, depending on thickness, until opaque and flaky.
- Spoon the attiéké onto a platter, top with the grilled fish and relish, and serve with lime wedges.
