Ingredients

Noodles and vegetables
  • 14 oz fresh yakisoba noodles or fresh wheat noodles
  • 1 tbsp neutral oil
  • 8 oz pork shoulder thinly sliced
  • 1/2 medium yellow onion thinly sliced
  • 2 cups green cabbage thinly sliced
  • 1 medium carrot cut into matchsticks
  • 2 green onions sliced
Yakisoba sauce
  • 2 tbsp Worcestershire sauce
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp granulated sugar
  • 1/4 tsp black pepper

Equipment

  • Large skillet or wok
  • Tongs
  • Small mixing bowl
  • Chef's knife

Method

Make the sauce:
  1. Whisk the Worcestershire sauce, oyster sauce, soy sauce, sugar, and black pepper in a small bowl.
  2. Separate the noodles. If they are chilled, loosen them in hot water for 30 seconds, then drain well.
Stir-fry:
  1. Heat the oil in a large skillet or wok over medium-high heat. Add the pork and cook until lightly browned.
  2. Add the onion, cabbage, and carrot. Stir-fry for 3 to 4 minutes, until the vegetables are crisp-tender.
  3. Add the noodles and sauce. Toss continuously for 2 to 3 minutes until the noodles are glossy and hot.
  4. Fold in the green onions and serve immediately.

Notes

  • Keep the pan hot and avoid overcrowding so the noodles develop lightly charred edges.
  • Taste before adding salt because the sauces are already savory.
