Extract the Malt Water:
- Whisk the barley malt powder with 6 cups of cool water. Let stand for 2 hours.
- Pour the mixture through a fine-mesh strainer into a stockpot, leaving the gritty sediment behind. Add the remaining water and ginger.
Sweeten:
- Bring the malt water to a gentle simmer and cook for 30 minutes.
- Stir in the cooked rice and sugar. Simmer for 10 minutes, then remove the ginger and cool to room temperature.
Chill and Serve:
- Transfer the punch to a pitcher and refrigerate for at least 2 hours.
- Pour into glasses with a few rice grains and garnish with pine nuts.
