Kugelis
  • 3 lb russet potatoes peeled
  • 8 oz thick-cut bacon diced
  • 2 medium yellow onions finely chopped
  • 3 large eggs
  • 1 cup whole milk warmed
  • 2 tbsp butter for the baking dish
  • 1 tsp dried marjoram
  • 1 tsp fine salt
  • 1/2 tsp black pepper
To Serve
  • 1 cup sour cream

  • Large skillet
  • Box grater
  • Mixing bowl

Method
 

Prepare the Mixture:
  1. Heat the oven to 375°F (190°C). Butter a 9-by-13-inch baking dish.
  2. Cook the bacon in a large skillet until crisp. Add the onions and cook until soft and golden, then remove from the heat.
  3. Finely grate the potatoes. Whisk the eggs, warm milk, marjoram, salt, and pepper together, then stir into the potatoes with the bacon mixture.
Bake:
  1. Pour the potato mixture into the prepared dish and spread it level.
  2. Bake for 75 to 90 minutes until the top is deeply browned and the center is set.
  3. Rest for 15 minutes, slice into squares, and serve with sour cream.
