Ingredients

Pork and coconut stew
  • 2 lb pork shoulder cut into 1-inch pieces
  • 1 1/2 cups coconut milk full-fat
  • 1 cup water
  • 3 medium tomatoes chopped
  • 1 medium yellow onion diced
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger finely grated
  • 2 tbsp neutral oil
  • 1 tsp fine salt
  • 1/2 tsp black pepper
  • 1/4 cup scallions sliced, for serving
Rice
  • 2 cups long-grain white rice
  • 3 cups water
  • 1/2 tsp fine salt

Equipment

  • Large Dutch oven
  • Chef's knife
  • Cutting board
  • Wooden spoon
  • Medium saucepan for rice

Method

Brown and simmer the pork:
  1. Season the pork with half of the salt and the black pepper. Heat the oil in a Dutch oven over medium-high heat and brown the pork in batches for 5 to 6 minutes per batch.
  2. Add the onion and cook for 4 minutes. Stir in the garlic and ginger for 30 seconds, then add the tomatoes, coconut milk, water, and remaining salt.
  3. Bring to a gentle simmer, cover, and cook for 40 to 45 minutes, stirring occasionally, until the pork is tender.
Cook the rice and serve:
  1. Meanwhile, rinse the rice. Combine it with the water and salt in a saucepan, bring to a boil, cover, and simmer for 15 minutes. Rest off the heat for 10 minutes, then fluff.
  2. Taste the stew and adjust the seasoning. Spoon it over the rice and scatter with scallions.

Notes

  • Brown the pork in batches so it sears rather than steams.
  • Use full-fat coconut milk for a sauce that clings lightly to the meat and rice.
