Ingredients
 
 

Stew
  • 2 tbsp neutral oil divided
  • 1 1/2 lb beef chuck cut into 1-inch cubes
  • 1 large yellow onion diced
  • 3 cloves garlic minced
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1 can crushed tomatoes 14.5 oz / 411 g
  • 4 cups low-sodium beef broth
  • 1/2 cup smooth natural peanut butter unsweetened
  • 2 large sweet potatoes peeled and cubed
  • 2 cups okra sliced
  • 1 large carrot sliced
  • 1 tsp kosher salt or to taste
To finish
  • 2 tbsp chopped cilantro
  • 1 tbsp fresh lime juice

Equipment

  • Large Dutch oven

Method
 

Brown the beef:
  1. Warm half the oil in a Dutch oven over medium-high heat. Brown the beef in batches, then transfer it to a plate.
  2. Add the remaining oil and cook the onion until softened. Stir in the garlic, coriander, and paprika for 30 seconds.
Build the stew:
  1. Return the beef to the pot and add the tomatoes and broth. Bring to a gentle simmer, cover, and cook for 50 minutes.
  2. Whisk the peanut butter with 1 cup of hot broth, then stir it into the pot with the sweet potatoes, okra, carrot, and salt.
  3. Cover and simmer for 25 to 30 minutes, until the beef is tender and the vegetables are cooked through.
Finish and serve:
  1. Stir in the lime juice and cilantro. Taste and adjust the salt.
  2. Rest for 5 minutes, then serve warm with rice or another grain.
