  • 4 oz bacon finely chopped
  • 1/2 cup plain breadcrumbs
  • 1 medium yellow onion finely chopped
  • 2 cloves garlic minced
  • 1/4 cup fresh parsley chopped
  • 1 large egg beaten
  • 1 tsp fine salt
  • 1/2 tsp black pepper
Braising sauce
  • 2 tbsp olive oil
  • 1 cup dry red wine
  • 1 can crushed tomatoes 14 oz can
  • 1 cup beef stock
  • 2 leaves bay leaves

Equipment

  • Meat mallet
  • Large Dutch oven
  • Toothpicks or kitchen twine
  • Tongs
  • Chef's knife

Method

Make the filling:
  1. Cook the bacon in a skillet until it releases some fat. Add the onion and cook for 5 minutes, then stir in the garlic for 30 seconds.
  2. Transfer to a bowl and mix with the breadcrumbs, parsley, egg, salt, and pepper.
Roll the beef:
  1. Lay the beef slices flat and season lightly. Place a spoonful of filling near one end, fold in the sides, and roll tightly. Secure each roll with toothpicks or twine.
  2. Heat the olive oil in a Dutch oven and brown the rolls on all sides. Work in batches if needed.
Braise and serve:
  1. Pour in the wine and scrape up the browned bits. Add the tomatoes, stock, and bay leaves.
  2. Cover and simmer gently for 1 hour 30 minutes, turning the rolls once, until tender.
  3. Remove the bay leaves and toothpicks or twine. Spoon the sauce over sliced bragioli and serve hot.
