Poach the Chicken:
- Place the chicken in a saucepan, cover with water, and simmer gently until cooked through, about 18 minutes.
- Transfer the chicken to a plate, reserve 1/2 cup of the cooking liquid, and shred the meat into irregular strands.
Build the Sauce:
- Warm the oil in a large saucepan and cook the onion until soft. Add the garlic and cumin for 30 seconds.
- Blend the walnuts, aji amarillo paste, evaporated milk, stock, pepper, and softened onion mixture until smooth.
- Return the sauce to the pan and simmer gently for 8 to 10 minutes, thinning with reserved cooking liquid as needed.
Finish and Serve:
- Fold in the shredded chicken and warm for 3 to 4 minutes without boiling hard.
- Spoon over rice and serve with olives and halved eggs.
