Cook the Duck:
- Combine the duck, water, quartered onion, carrot, bay leaves, and half the salt. Bring to a gentle simmer, skim, and cook 60 to 70 minutes until tender.
- Lift out the duck. Strain and reserve the broth, then remove skin and bones and shred the meat into irregular pieces.
Cook the Rice:
- Heat the oil and soften the chopped onion for 7 minutes. Add garlic and half the chourico and cook for 2 minutes.
- Stir in rice, 4 cups broth, pepper, and remaining salt. Simmer uncovered until the rice is just underdone and most broth is absorbed, about 12 minutes.
Bake:
- Fold duck and parsley through the rice, transfer to the baking dish, and top with remaining chourico. Brush lightly with egg yolk if using.
- Bake at 400 F for 20 to 25 minutes until broadly golden. Rest 10 minutes before serving.
