Ingredients

Raclette plate
  • 2 lb small waxy potatoes scrubbed
  • 1.5 lb raclette cheese sliced
  • 1 cup cornichons for serving
  • 1 cup pickled pearl onions for serving
  • 2 cups steamed broccoli and cauliflower for serving
  • 0.5 tsp fine salt for the potatoes
  • 0.25 tsp ground black pepper

Equipment

  • Raclette grill or broiler
  • Large pot
  • Baking tray
  • Tongs
  • Serving platter

Method

Cook the potatoes and vegetables:
  1. Place the potatoes in a large pot, cover with water, add the salt, and simmer for 18 to 22 minutes until tender when pierced.
  2. Steam the broccoli and cauliflower until just tender, about 5 minutes. Drain the potatoes well and keep both warm.
Melt the cheese:
  1. Heat the raclette grill or broiler. Place cheese slices in small raclette pans or on a baking tray.
  2. Melt the cheese until soft and bubbling at the edges, 3 to 5 minutes. Watch closely so it melts without burning.
Serve:
  1. Arrange the potatoes and vegetables on a platter. Scrape the melted cheese over the potatoes and season with the pepper.
  2. Serve immediately with cornichons and pickled onions alongside.

  • Serve the cheese in small batches so each portion reaches the table while molten.
