Ingredients

Yogurt Sauce
  • 2 cups plain yogurt
  • 1/2 cup water
  • 1 tsp fine salt
Bread and Vegetables
  • 4 pieces flatbread torn into bite-size pieces
  • 2 medium tomatoes chopped
  • 1 large cucumber halved and sliced
  • 1 medium white onion thinly sliced
  • 1/2 cup fresh cilantro roughly chopped
  • 1/4 cup fresh dill chopped
Warm Onion Finish
  • 2 tbsp vegetable oil
  • 1/2 tsp ground cumin

Equipment

  • Large serving platter
  • Mixing bowl
  • Chef's knife
  • Small skillet

Method

Prepare the Sauce:
  1. Whisk the yogurt, water, and salt in a bowl until smooth and pourable. Set aside while preparing the vegetables.
Build the Platter:
  1. Spread the torn flatbread over a broad serving platter. Spoon the yogurt sauce over the bread gradually, turning the pieces gently so they soften without becoming mushy.
  2. Scatter the tomatoes, cucumber, onion, cilantro, and dill over the yogurt-coated bread.
Finish and Serve:
  1. Warm the vegetable oil in a small skillet, add the cumin, and cook for 30 seconds. Pour the warm oil over the platter and serve immediately.

Notes

  • The sauce should moisten the bread without pooling heavily at the bottom of the platter.
  • For the best texture, keep all components chilled or at room temperature until assembly.
