Salad
  • 1 lb green papaya peeled and julienned
  • 8 oz green beans cut into 2-inch pieces
  • 2 medium ripe tomatoes cut into wedges
  • 1/4 cup roasted peanuts roughly crushed
Dressing
  • 2 cloves garlic peeled
  • 2 small Thai bird’s eye chillies or to taste
  • 2 tbsp fresh lime juice

  • 1 tbsp palm sugar finely chopped

Equipment

  • Thai wooden mortar and pestle
  • Julienne peeler
  • Chef's knife
  • Mixing bowl

Method

Make the dressing:
  1. Pound the garlic and chillies in a mortar until roughly broken down.
  2. Add the lime juice, fish sauce, and palm sugar and stir until the sugar dissolves.
Toss and serve:
  1. Add the beans and tomatoes and pound lightly a few times to bruise them without turning them mushy.
  2. Transfer the dressing mixture to a large bowl, add the papaya, and toss until evenly coated.
  3. Fold in most of the peanuts and serve immediately with the remaining peanuts scattered over the top.
