Ingredients

Dough
  • 3 cups all-purpose flour plus more for rolling
  • 1 tsp kosher salt
  • 1 1/4 cups warm water
  • 1 tbsp olive oil
Filling and Serving
  • 10 oz baby spinach roughly chopped
  • 1 cup crumbled feta
  • 2 tbsp fresh dill, chopped
  • 1/2 tsp black pepper
  • 2 tbsp olive oil for cooking
  • 1 cup plain yogurt for serving
  • 1 whole lemon, cut into wedges for serving

Equipment

  • Mixing bowls
  • Rolling Pin
  • Large skillet
  • Pastry brush

Method

Make the Dough:
  1. Mix the flour and salt in a bowl. Add the warm water and olive oil and knead until a soft dough forms.
  2. Divide into 4 balls, cover, and rest for 20 minutes.
Make the Filling:
  1. Wilt the spinach in a dry skillet for 2 to 3 minutes. Cool, then squeeze out excess moisture and chop.
  2. Mix the spinach with the feta, dill, and black pepper.
Roll and Cook:
  1. Roll each dough ball into a thin rectangle. Spread one quarter of the filling over the center and fold the dough into a sealed square.
  2. Heat a skillet over medium heat. Brush one side of a gözleme with a little oil and cook oil-side down for 3 to 4 minutes per side until browned and crisp.
  3. Cut into wedges and serve with yogurt and lemon.
