Ingredients

Salep
  • 4 cups whole milk
  • 2 tsp pure food-grade salep powder
  • 1/4 cup granulated sugar or to taste
  • 1 tsp ground cinnamon for serving

Equipment

  • Medium saucepan
  • Whisk
  • Wooden spoon
  • Small heatproof cups

Method

Mix:
  1. Whisk the salep powder with the sugar in a saucepan so the fine powder disperses evenly.
  2. Gradually whisk in the cold milk until completely smooth.
Cook:
  1. Set over medium-low heat and cook, stirring continuously, until steaming and lightly thickened, 15 to 20 minutes. Do not boil hard.
  2. The drink is ready when it coats the spoon lightly while remaining pourable.
Serve:
  1. Pour into small heatproof cups and dust each lightly with cinnamon. Serve hot.

  • Reheat gently while stirring and add a little milk if the drink thickens after cooling.
