Ingredients

Stew
  • 2 tbsp neutral oil
  • 1 large yellow onion diced
  • 3 cloves garlic minced
  • 3 medium tomatoes chopped
  • 2 tbsp tomato paste
  • 1 lb okra sliced
  • 1 lb pumpkin or butternut squash peeled and cubed
  • 1 large sweet potato peeled and cubed
  • 1/2 cup smooth natural peanut butter
  • 5 cups water or vegetable stock
  • 1 tsp ground coriander
  • 1 tsp fine salt
  • 1/4 cup fresh coriander chopped

Equipment

  • Large Dutch oven
  • Chef's knife
  • Cutting board
  • Small bowl
  • Wooden spoon

Method

Start the vegetables:
  1. Heat the oil in a Dutch oven over medium heat. Add the onion and cook for 6 minutes. Add the garlic, tomatoes, tomato paste, and coriander and cook for 8 minutes, until the tomatoes soften.
  2. Add the okra, pumpkin, sweet potato, water, and salt. Bring to a boil, cover, and simmer for 25 minutes, until the vegetables are tender.
Finish the peanut stew:
  1. Whisk the peanut butter with 1 cup of hot broth in a bowl until smooth. Stir it back into the pot.
  2. Simmer uncovered for 8 to 10 minutes, stirring often, until the stew is thick and glossy. Fold in the fresh coriander, taste for salt, and serve.

Notes

  • Peanut butter is a defining ingredient here; use a natural smooth variety without added sugar for the cleanest savoury flavour.
  • Okra thickens the stew naturally, so avoid vigorous stirring once it is tender.
