Daraba is a comforting Chadian stew built around okra, vegetables, and peanut butter. The peanut base gives the broth body while the okra adds its characteristic gentle thickness.
Cook the tomato and aromatics first, simmer the firm vegetables until tender, then whisk in the peanut butter so it dissolves smoothly without scorching.
Stir the peanut butter with warm broth in a separate bowl before adding it to the pot for an even, lump-free sauce.
Serving Suggestions
Serve hot with millet, rice, or a simple cornmeal porridge to catch the rich stew.

Recipe Notes
Store covered in the refrigerator for up to 4 days. Reheat gently and add water if the peanut sauce thickens too much.

Notes
- Peanut butter is a defining ingredient here; use a natural smooth variety without added sugar for the cleanest savoury flavour.
- Okra thickens the stew naturally, so avoid vigorous stirring once it is tender.
