Instructions
Make the foam:
Add the instant coffee, sugar, and 2 tablespoons cold water to a shaker or jar.
Shake vigorously for 20 to 30 seconds until thick and foamy.
Build the drink:
Pour the foam into a tall glass and add the ice.
Top with cold water or milk and stir gently once, leaving a thick foam cap.
Serve:
Add a straw and optional lemon peel. Serve immediately.
Notes
Adjust sugar to taste.
A milk finish makes the drink softer and creamier.
Use plenty of ice for the classic café-style presentation.
