Ingredients
 
 

Pilao
  • 3 tbsp neutral oil
  • 2 lb bone-in chicken thighs skin removed
  • 2 large yellow onions thinly sliced
  • 4 cloves garlic minced
  • 1 inch fresh ginger finely grated
  • 2 cups basmati rice rinsed until water runs mostly clear
  • 3 cups chicken broth low-sodium
  • 1 stick cinnamon
  • 5 pods cardamom lightly crushed
  • 4 whole cloves
  • 1 tsp ground cumin
  • 1 tsp kosher salt or to taste
  • 1/2 tsp ground black pepper
To finish
  • 2 tbsp chopped fresh cilantro
  • 1 medium lime cut into wedges

Equipment

  • Large Dutch oven with lid
  • Fine-mesh strainer
  • Chef's knife
  • Fork

Method
 

Brown the chicken and onions:
  1. Heat the oil in a Dutch oven over medium-high heat. Brown the chicken on both sides, then transfer it to a plate.
  2. Add the onions and cook for 8 to 10 minutes until golden. Stir in the garlic, ginger, cinnamon, cardamom, cloves, cumin, salt, and pepper for 1 minute.
Cook the pilao:
  1. Stir in the rinsed rice and coat it with the spiced onion mixture. Add the broth and return the chicken to the pot.
  2. Bring to a simmer, cover, and cook over low heat for 20 minutes, until the rice is tender and the chicken is cooked through.
  3. Turn off the heat and rest covered for 10 minutes.
Fluff and serve:
  1. Remove the whole spices and chicken pieces if needed for easier serving. Fluff the rice gently with a fork.
  2. Return the chicken to the rice, scatter with cilantro, and serve with lime wedges.

Notes

  • Rinse the rice well so the finished pilao stays separate rather than sticky.
  • If the chicken pieces are large, check the thickest piece reaches 165°F / 74°C.
