Comorian pilao reflects the island nation’s Indian Ocean connections, combining fragrant rice, browned chicken, warm spices, and sweet onions in one pot.
This practical version blooms the spices in oil, browns the chicken, and cooks the rice in the seasoned broth so every grain carries the dish’s aroma.
Let the rice rest covered after cooking; that short pause finishes the grains and makes the pilao easier to fluff without breaking them.
Serving Suggestions
Serve with a tomato and cucumber salad, lime wedges, and a spoonful of chile sauce.

Recipe Notes
The pilao keeps refrigerated for up to 3 days. Reheat covered with a splash of water and fluff gently.

Brown the chicken and onions:
- Heat the oil in a Dutch oven over medium-high heat. Brown the chicken on both sides, then transfer it to a plate.
- Add the onions and cook for 8 to 10 minutes until golden. Stir in the garlic, ginger, cinnamon, cardamom, cloves, cumin, salt, and pepper for 1 minute.
Cook the pilao:
- Stir in the rinsed rice and coat it with the spiced onion mixture. Add the broth and return the chicken to the pot.
- Bring to a simmer, cover, and cook over low heat for 20 minutes, until the rice is tender and the chicken is cooked through.
- Turn off the heat and rest covered for 10 minutes.
Fluff and serve:
- Remove the whole spices and chicken pieces if needed for easier serving. Fluff the rice gently with a fork.
- Return the chicken to the rice, scatter with cilantro, and serve with lime wedges.

Notes
- Rinse the rice well so the finished pilao stays separate rather than sticky.
- If the chicken pieces are large, check the thickest piece reaches 165°F / 74°C.
