Instructions
Make the Syrup:
Combine the sugar and 1/2 cup water in a small saucepan. Warm over medium heat, stirring, until the sugar dissolves. Cool completely.
Mix and Chill:
Combine the strained calamansi juice, cooled syrup, and cold water in a pitcher. Taste and add more syrup or water as needed.
Pour over ice, garnish with calamansi halves, and serve immediately.
Notes
Fresh calamansi juice is tart; adjust the sweetness to taste.
For a pitcher, refrigerate the mixed drink for up to 24 hours and add ice just before serving.
