Instructions
Blind-Bake the Crust:
Heat the oven to 375°F (190°C). Fit the crust into a 9-inch tart pan, prick the base, line with parchment, and fill with baking weights.
Bake for 15 minutes. Remove the weights and bake for 5 minutes more, then cool slightly.
Make the Filling:
Cook the bacon in a skillet over medium heat for 6 minutes until browned. Drain and cool.
Whisk the eggs, cream, milk, salt, pepper, and nutmeg until smooth. Stir in the bacon and Gruyere.
Bake and Serve:
Pour the filling into the crust. Bake for 30 to 35 minutes until golden and just set with a slight wobble in the center.
Rest for 15 minutes, slice, and serve with dressed greens.
Notes
Cool the bacon before adding it to the custard.
Do not overbake or the custard may become grainy.
