Blind-Bake the Crust:
- Heat the oven to 375°F (190°C). Fit the crust into a 9-inch tart pan, prick the base, line with parchment, and fill with baking weights.
- Bake for 15 minutes. Remove the weights and bake for 5 minutes more, then cool slightly.
Make the Filling:
- Cook the bacon in a skillet over medium heat for 6 minutes until browned. Drain and cool.
- Whisk the eggs, cream, milk, salt, pepper, and nutmeg until smooth. Stir in the bacon and Gruyere.
Bake and Serve:
- Pour the filling into the crust. Bake for 30 to 35 minutes until golden and just set with a slight wobble in the center.
- Rest for 15 minutes, slice, and serve with dressed greens.
