Instructions
Make the batter:
Whisk the warm water, yeast, and sugar in a bowl. Let stand for 5 minutes, then whisk in the flour, salt, and olive oil until a loose batter forms.
Cover and let rise in a warm place until doubled, about 1 hour.
Fry:
Heat the oil to 350°F (175°C) in a deep pot. Use a wet spoon to scoop small portions of batter into the oil.
Fry in batches until puffed and deeply golden, turning as needed. Drain on a rack or paper towels.
Finish and serve:
Arrange the loukoumades on a plate. Drizzle with warm honey and scatter with walnuts, cinnamon, and sesame seeds.
Notes
Keep the oil at a steady temperature so the centers cook before the outsides darken.
Serve immediately for the best crisp texture.
