Dough
  • 2 cups all-purpose flour
  • 1 1/2 cups warm water
  • 2 1/4 tsp active dry yeast
  • 2 tbsp granulated sugar
  • 1/2 tsp fine salt
  • 1 tbsp olive oil
Frying and topping
  • 4 cups neutral frying oil
  • 1/2 cup honey warmed
  • 1/2 cup walnuts chopped
  • 1 tsp ground cinnamon
  • 1 tbsp sesame seeds

Method
 

Make the batter:
  1. Whisk the warm water, yeast, and sugar in a bowl. Let stand for 5 minutes, then whisk in the flour, salt, and olive oil until a loose batter forms.
  2. Cover and let rise in a warm place until doubled, about 1 hour.
Fry:
  1. Heat the oil to 350°F (175°C) in a deep pot. Use a wet spoon to scoop small portions of batter into the oil.
  2. Fry in batches until puffed and deeply golden, turning as needed. Drain on a rack or paper towels.
Finish and serve:
  1. Arrange the loukoumades on a plate. Drizzle with warm honey and scatter with walnuts, cinnamon, and sesame seeds.
