Ingredients
 
 

Spinach Curry
  • 1 lb baby spinach washed
  • 1 large onion chopped
  • 2 medium tomatoes chopped
  • 4 cloves garlic minced
  • 1 in fresh ginger peeled and grated
  • 1 small green chili seeded if desired
  • 2 tbsp ghee or neutral oil
  • 1/2 cup heavy cream
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1/2 tsp ground turmeric
  • 1 tsp salt
  • 1/2 cup water
Paneer
  • 12 oz paneer cut into cubes
  • 1 tbsp neutral oil for searing

Equipment

  • Large skillet
  • Blender
  • Large pot
  • Fine-mesh strainer

Method
 

Blanch the Spinach:
  1. Bring a large pot of salted water to a boil. Add the spinach for 60 seconds, then transfer it to ice water and drain well.
  2. Blend the spinach with the green chili and water until smooth. Set aside.
Build the Curry:
  1. Heat the ghee in a skillet. Add the paneer and sear on several sides until golden; remove to a plate.
  2. Add the cumin seeds, onion, garlic, and ginger. Cook until softened, then add the tomatoes, turmeric, garam masala, and salt. Cook until the tomatoes break down.
  3. Blend the onion-tomato mixture until smooth, return it to the skillet, and stir in the spinach puree and cream. Simmer gently for 5 minutes.
Finish:
  1. Fold the seared paneer into the curry and simmer for 2 to 3 minutes. Taste and adjust the salt.
  2. Serve hot with basmati rice or naan.

Notes

  • For a smoother curry, blend the tomato base thoroughly before adding the spinach.
