Jamaican Ginger Beer

A bold alcohol-free Jamaican ginger drink with fresh lime, allspice, cloves, and balanced sweetness.

Ingredients

Ginger Beer

  • 1 lb fresh ginger scrubbed and roughly chopped
  • 8 cups water divided
  • 1 1/4 cups granulated sugar or to taste
  • 4 medium limes juiced
  • 1 tsp whole allspice berries lightly crushed
  • 6 whole cloves
  • 1/4 tsp fine salt

Instructions

Extract the Ginger:

  • Blend ginger with 3 cups of the water until coarsely pulpy. Transfer to a large heatproof bowl.
  • Bring the remaining 5 cups water to a boil. Pour it over the ginger, add allspice and cloves, cover, and steep for 2 hours.

Strain and Sweeten:

  • Strain through a fine-mesh sieve, pressing firmly, then strain again through damp cheesecloth if desired.
  • While the liquid is still slightly warm, stir in sugar and salt until dissolved. Cool, then stir in lime juice.

Chill and Serve:

  • Refrigerate for at least 2 hours. Taste and adjust with more lime or sugar, then serve over ice.

Notes

  • This is a non-fermented ginger beer and contains no alcohol.
  • For a gentler drink, dilute each serving with a splash of cold sparkling water.
