Instructions
Prepare the Coffee:
Warm two heatproof tall glasses with hot water, then empty and dry them.
Brew 2 fluid ounces of espresso or strong moka-pot coffee into each glass.
Heat the Milk:
Heat the milk until steaming and about 150°F (65°C), without boiling. Froth only briefly so a thin natural foam forms.
Combine:
Pour 6 fluid ounces of hot milk into each glass, aiming for roughly three parts milk to one part coffee.
Sweeten to taste if desired, stir once, and serve immediately.
Notes
Galão is milkier than a meia de leite and is traditionally served in a tall glass.
Use medium-dark coffee with enough strength to remain distinct after the milk is added.
