Equipment

  • 2-quart glass jar
  • Fine-mesh strainer
  • Funnel
  • Small glasses

Ingredients

Plum Infusion

  • 2 lb ripe plums pitted and quartered
  • 1 bottle vodka or neutral spirit 750 ml, 40 percent ABV
  • 1/2 cup granulated sugar adjust to taste
  • 1 piece lemon peel optional

Instructions

Prepare:

  • Wash and pit the plums. Place them in a sterilized 2-quart jar with the sugar and optional lemon peel.
  • Pour in the spirit, making sure the fruit is fully submerged. Seal and shake gently.

Steep:

  • Store the jar in a cool, dark place for 2 to 3 weeks, shaking gently every few days.
  • Taste after 14 days. When the plum aroma is strong and balanced, strain through a fine-mesh strainer lined with cheesecloth.

Rest and serve:

  • Pour into a clean bottle and rest for at least 2 days before serving. Serve chilled in small glasses with savory snacks.

Notes

  • This recipe infuses purchased spirit and does not involve home distillation.
  • Use a neutral spirit so the plum flavor stays clear.
  • Serve responsibly; this is a strong alcoholic drink.
