Instructions
Prepare:
Wash and pit the plums. Place them in a sterilized 2-quart jar with the sugar and optional lemon peel.
Pour in the spirit, making sure the fruit is fully submerged. Seal and shake gently.
Steep:
Store the jar in a cool, dark place for 2 to 3 weeks, shaking gently every few days.
Taste after 14 days. When the plum aroma is strong and balanced, strain through a fine-mesh strainer lined with cheesecloth.
Rest and serve:
Pour into a clean bottle and rest for at least 2 days before serving. Serve chilled in small glasses with savory snacks.
Notes
This recipe infuses purchased spirit and does not involve home distillation.
Use a neutral spirit so the plum flavor stays clear.
Serve responsibly; this is a strong alcoholic drink.
