Ingredients
 
 

Uzvar
  • 10 cups water
  • 2 cups dried apple slices unsweetened
  • 1 cup dried pear slices unsweetened
  • 3/4 cup pitted prunes
  • 2 whole cinnamon sticks
  • 4 whole cloves
  • 1/3 cup honey or to taste
  • 2 tbsp fresh lemon juice

  • Large saucepan
  • Fine-mesh strainer
  • Glass pitcher
  • Wooden spoon

Method
 

Simmer:
  1. Rinse dried fruit in cool water. Bring the water to a boil, add apples, pears, prunes, cinnamon, and cloves, then reduce to a very gentle simmer for 15 to 20 minutes.
  2. Remove from heat, cover, and steep for at least 2 hours.
Sweeten and Chill:
  1. When warm rather than hot, stir in honey and lemon juice. Taste and adjust sweetness.
  2. Strain for a clear drink, reserving some fruit if desired. Chill for at least 2 hours and serve without ice.
