Uzvar is a traditional Ukrainian dried-fruit drink often served for Christmas Eve and other winter gatherings.
The fruit simmers briefly, then steeps off heat so the drink becomes fragrant and amber without turning cloudy or overcooked.
Add honey only after the liquid cools below a simmer to preserve its fresh aroma.

Simmer:
- Rinse dried fruit in cool water. Bring the water to a boil, add apples, pears, prunes, cinnamon, and cloves, then reduce to a very gentle simmer for 15 to 20 minutes.
- Remove from heat, cover, and steep for at least 2 hours.
Sweeten and Chill:
- When warm rather than hot, stir in honey and lemon juice. Taste and adjust sweetness.
- Strain for a clear drink, reserving some fruit if desired. Chill for at least 2 hours and serve without ice.
