Panela Syrup

Instructions
Dissolve:
Combine the panela and 2 cups water in a saucepan. Warm over medium heat for about 5 minutes, stirring until fully dissolved.
Strain into a pitcher if the panela contains sediment and cool for 30 minutes.
Mix:
Stir the cold water and lime juice into the cooled panela syrup. Taste and add a little more water or lime if needed.
Chill until ready to serve.
Serve:
Fill six glasses with ice and pour in the papelon con limon.
Add one lime slice per glass if desired and serve immediately.
Notes
Panela sweetness varies; dilute with extra cold water to taste.
Add lime only after the syrup cools to preserve its fresh flavor.
