This home-style Bahraini version roasts the chicken for color, then cooks the seasoned rice in the same aromatic spirit for a generous family platter.
Rinse the rice until the water runs mostly clear and let it rest covered after cooking so the grains finish fluffy.

Season and roast the chicken:
- Heat the oven to 425°F / 220°C. Toss the chicken with the lemon juice, half the salt, pepper, turmeric, and cinnamon.
- Arrange the chicken on a roasting pan and roast for 35 to 40 minutes, until browned and cooked through. Rest loosely covered while the rice cooks.
Build the rice base:
- Heat 1 tablespoon of the oil in a large Dutch oven over medium heat. Cook the onion for 8 to 10 minutes until deeply golden. Stir in the garlic and tomato and cook for 2 minutes.
- Add the remaining oil, rinsed rice, stock, cinnamon stick, cardamom, cloves, dried limes, remaining salt, turmeric, and cinnamon. Bring to a boil.
Cook and serve:
- Cover the pot, reduce the heat to low, and cook for 18 minutes without lifting the lid. Scatter the raisins over the rice, cover again, and rest for 10 minutes.
- Fluff the rice gently with a fork, fold in the cilantro, and arrange the roasted chicken on top. Serve hot.
