Galbi jjim is a Korean braise of beef short ribs and vegetables cooked slowly in a savory, gently sweet sauce until the meat is tender.
Blanch and rinse the ribs first, then braise them with an aromatic pear-based sauce before adding the vegetables in stages so they hold their shape.
Skim excess fat after the first simmer; the sauce will taste cleaner and cling more naturally to the ribs.
Serving Suggestions
Serve with steamed rice and a few simple banchan such as kimchi or blanched greens.

Recipe Notes
The braise can be made a day ahead. Chill it overnight, lift off the solidified fat, and reheat gently before serving.
