Ingredients
 
 

Grey Peas
  • 2 cups dried grey peas soaked overnight and drained
  • 6 cups water plus more for soaking
  • 1 tsp fine salt
  • 2 leaves bay leaves
Bacon Topping
  • 8 oz thick-cut bacon diced
  • 1 large yellow onion thinly sliced
  • 1/2 cup sour cream for serving
  • 1/4 cup fresh dill chopped
  • 1 medium cucumber sliced, for serving

Method
 

Cook the Peas:
  1. Soak the peas in plenty of cold water overnight. Drain and rinse them.
  2. Place the peas, fresh water, salt, and bay leaves in a large pot. Bring to a boil, skim the surface, then simmer gently for 75 to 90 minutes until tender but not mushy.
  3. Drain the peas and remove the bay leaves.
Brown the Bacon and Onion:
  1. Cook the bacon in a heavy skillet over medium heat until browned and crisp. Transfer it to a plate, leaving the rendered fat in the skillet.
  2. Add the onion and cook in the bacon fat until soft and golden, 8 to 10 minutes.
Finish and Serve:
  1. Fold half of the bacon and onion through the warm peas. Taste and adjust the salt.
  2. Spoon into bowls and top with the remaining bacon, onion, sour cream, and dill. Serve with cucumber slices.
