Ingredients
 
 

Sugarcane Juice
  • 4 lb peeled fresh sugarcane cut to fit the press
  • 8 whole kumquats or calamansi washed and halved
  • 4 cups ice cubes
  • 1/8 tsp fine sea salt optional

Equipment

  • Sugarcane press or heavy-duty juicer rated for cane
  • Fine-mesh strainer
  • Large pitcher
  • Tall glasses

Method
 

Press the Cane:
  1. Feed the sugarcane through a clean press or a heavy-duty juicer rated for cane. Pass the flattened cane through a second time if the machine allows.
  2. Press or squeeze six kumquats with the cane, then strain the juice into a chilled pitcher.
Serve:
  1. Stir in the optional pinch of salt. Taste and add more kumquat only if needed to balance the sweetness.
  2. Divide ice among four glasses, pour over the fresh juice, and garnish with the remaining kumquat halves. Serve immediately.
