Cake
  • 1 1/2 cups blanched almonds finely ground
  • 7 oz dark chocolate 60 to 70 percent cacao, chopped
  • 10 tbsp unsalted butter plus more for the pan
  • 5 large eggs separated
  • 3/4 cup granulated sugar divided
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1/4 tsp fine salt
  • 2 tbsp powdered sugar for finishing

Method
 

Prepare:
  1. Heat the oven to 350 F (175 C). Butter a 9-inch springform pan and line the base with parchment. Grind almonds finely without turning them into paste.
Make the Batter:
  1. Melt chocolate and butter together over barely simmering water, then cool for 5 minutes. Beat egg yolks with half the sugar until pale. Mix in chocolate, almonds, cocoa, and vanilla.
  2. In a clean bowl, beat egg whites with salt to soft peaks. Add remaining sugar gradually and beat to glossy medium peaks. Fold one-third into the chocolate mixture, then gently fold in the rest.
Bake and Cool:
  1. Spread batter in the pan and bake for 35 to 40 minutes, until the top is cracked and the center is set but still moist.
  2. Cool in the pan for 20 minutes, remove the ring, and cool completely for at least 40 minutes. Dust lightly with powdered sugar.
