Cachupa is Cape Verde’s deeply comforting corn-and-bean stew, with cachupa rica enriched by meats and vegetables.
Soaked cracked corn and beans simmer slowly before pork, linguiça, roots, and cabbage join the pot in stages.
Keep the simmer gentle and stir from the bottom as the corn releases starch and the broth thickens.
Serving Suggestions
Serve in warm bowls with hot sauce, bread, or a crisp green salad.

Recipe Notes
The stew thickens overnight and is excellent reheated with a splash of water.
