Soften the vegetables:
- Heat the palm oil in a wide Dutch oven. Cook the onion and pepper until softened, then add the garlic and tomatoes for two minutes.
Simmer the base:
- Add the okra, eggplant, greens, stock, salt, paprika, and pepper. Cover and simmer for 20 minutes, until the vegetables are tender.
Cook the fish:
- Nestle the fish into the stew. Cover and simmer gently for 10 to 12 minutes, spooning broth over the top, until the fish flakes easily.
Rest and serve:
- Turn off the heat and rest for five minutes. Serve the calulu over rice with lime wedges.
