Start the beans:
- Heat the oil in a heavy saucepan. Cook the onion until soft, then add the garlic and ginger for 30 seconds. Stir in the tomatoes and cook until they begin to break down.
Simmer the mung beans:
- Add the stock and soaked mung beans. Bring to a simmer, cover, and cook for 20 minutes, until the beans are beginning to soften.
Add the vegetables:
- Stir in the pumpkin, corn, salt, and pepper. Cover and simmer for 15 minutes, until the pumpkin is tender but still holds its shape.
Finish and serve:
- Fold in the greens and cook for 3 to 4 minutes. Taste for seasoning, scatter over the cilantro, and serve hot.
